The stubborn glass bottle at the diner hides four centuries of global history and some genuinely strange science. This episode traces the word ketchup back to a Fujian dialect term for the brine of pickled fish, follows it through Malay and Indonesian kecap sauces and a possible Arabic pickling lineage, and lands in 1680s England, where sailors reverse-engineered the flavor with oysters, walnuts and, above all, mushrooms. For over a century, ketchup meant mushroom sauce.
Tomatoes only entered the picture in America, with James Mease’s 1812 recipe and an 1817 version that still called for anchovies and insect dye, before Jonas Yerkes bottled it nationally in 1837.
